We are Drying Mangos!

Last year the BBC highlighted a young Ugandan entrepreneur, Lawrence Okettayot, who created a way to dry produce without electricity. It is called the Sparky Dryer. (See the BBC highlights here). We were inspired by his passion and his creativity. The Mango Project shared his vision of food preservation and saw an opportunity to work together. This past week we were honored for the Sparky Dryer and The Mango Project to come together in Yumbe District for the first time! We have been preserving mangos in jars for the past 7 years, but now for the first time we are also drying mangos! We are stronger together!
